Vinification Manual harvest in the first ten days of September. Selection of the must from a soft pressing of the grapes. Fermentation at low temperatures and short stop in steel tanks and a small part in wood. Second fermentation and maturation on the lees until remuage and subsequent disgorgement.
Visual test Bright antique pink color; abundant and persistent foam; very fine and persistent perlage.
Olfactory test Aromas of small berries, currants, raspberries and strawberries and delicate hints of almond.
Taste test Fine and elegant on the palate. Strong, savory, mineral and fresh, mountain taste.
Pairings Excellent as an aperitif. It also goes perfectly with many starters, first and second courses based on fish and white meats. Also excellent with medium-aged cheeses.
