  • Vinification Manual harvesting in the first ten days of September. Selection of the flower must from a soft pressing of the grapes. Fermentation at low temperatures and brief stop in steel tanks and a small part in wood. Second fermentation and maturation on the lees until remuage and subsequent disgorgement. 
  • Visual exam Bright antique pink colour; abundant and persistent foam; very fine and persistent perlage.
  • Olfactory examination Scents of small berries, currants, raspberries and strawberries and delicate hints of almond.
  • Taste test Fine and elegant on the palate. Strong, savory, mineral and fresh taste, from the mountains.
  • Pairings Excellent as an aperitif. It also goes perfectly with many appetizers, first and second courses based on fish and white meats. Also excellent with medium-aged cheeses.
