Area Terraced mountain vineyards in Trentino, Valle di Cembra

Soil Limestone Chardonnay grapes, harvested exclusively by hand in the first half of September.

Exposure West (optimal for obtaining ripe grapes but with a marked acidity)

Planting system Trentino pergola and guyot, yield about 60 hl/ha Serving temperature 8-10° C

Vinification After a careful manual selection of the grapes, a soft pressing of the whole grapes follows, with free-run must. Fermentation and aging for about 85 / 90% in stainless steel tanks at a controlled temperature and the remainder in tonneaux. Second fermentation in the bottle according to the classic method and subsequent long aging on the lees for over 60 months in an underground cellar at a constant temperature. No dosage is added to the disgorgement.

 

Visual exam Straw yellow colour; abundant and persistent foam; very fine and persistent perlage.

Olfactory exam Elegant and intense bouquet, fragrant and complex, with floral notes and ripe yellow fruit typical of Chardonnay, but also subtle notes of hazelnut and lightly toasted bread, due to the long aging on the lees.

Taste exam Definitely dry wine. Savory, mineral and fresh. A sparkling wine which, due to its characteristics, immediately leads back to the Cembra valley, a very suitable Terroir for Trento Doc.

 

Pairings Excellent as an aperitif, for the most demanding palates. It also goes well with the whole meal. It is perfect with fish dishes, shellfish, vegetables, alpine cold cuts and aged cheeses, rice, pasta and fish and white meat main courses.
